Relaxing Weekend...

Hey y'all! This weekend we've planned absolutely nothing! I love weekends like this, I need to recharge from an insane week at work, and Girls Night Out Thursday! On that note, it's never good when you wake up and your entire body aches...coincidentally it only does this when I'm in the company of my favorite girls the night before...haha! We have too much fun...Thursday consisted of Margaritas,Mexican Food, Some amazing brownie concoction in a skillet, Free drinks on the patio compliments of the Manager, Ear Piercing, A candy machine that took a credit card, A bar where we used Julianne's Facebook to verify her age b/c she couldn't find her ID, What I thought was a near death mugging experience for me in Hillcrest, Another bar with friends, then back to the Condo for a sleepover with late night conversation, and too much laughing! I love, love, love my best girls! I don't know what I'd do without them! :)

Last night Nate and I stayed in...he cooked dinner and we watched a movie...
Yum, he wanted an omelet and I wanted a breakfast burrito...It was delish!

Today I am cleaning house, putting some items on eBay, and getting things ready for a Yard Sale the girls and I are having in a few weeks. I am home alone this morning, Nate had to work over time, but I have been craving breakfast casserole, so I whipped one up! I don't know if this is a Southern thing, I think we tend to turn everything into a casserole!? It's delish...you should definitely try it!


You'll need:
1 pkg crescent rolls
1 lb mild sausage, browned and drained
6 eggs, beaten
2 cups shredded cheddar cheese
I was already browning the sausage when I remembered to take a picture :)


Preheat your oven to 350. Take a 9×13 pan and spray it with Pam. Roll out crescent rolls in the bottom of the pan:
Top with an even layer of browned and drained sausage:
 Beat eggs (and I add a little cheese in with the beaten eggs):
 Pour over the layer of sausage:
 Top generously with cheese:
 Bake at 350 for 30 minutes:
 Enjoy...

Like/Love/Lust

Let's start this post about loving things with the fact that I saw a trailer Sunday for a movie with Taylor Lautner playing the lead role...It could be a silent film for all I care...as long as I get to see this...
I guess this also qualifies as lusting...lol
I have developed a love for Vera Bradley recently...I have had a few pieces here and there throughout the years, but a few of my current favorite things are Vera...I love my Large Cosmetic bag, 2012 Agenda, and Large Duffel.

I am lusting a new LV bag! I am currently carrying the LV Neverfull GM...and it's ok...just insanely large. I am trying to decide if I should get a new one in NYC in December...I just can't decide which style!?

I love Pinterest...I seriously need a "Pintervention"! I am Lacey, recovering shopaholic, recovering Facebook addict, and current Pinterest junkie...sue me! :)  It has become my favorite social networking site...no drama...haha! Does it count as social networking!?

My 25th Birthday is right around the corner, and even though I'm mostly asking for money for NYC...I still have a list of things I would like to have ;)

A new digital camera...I think I've decided against a DSLR and I just want an awesome Point & Shoot...I've narrowed it down to 2 options...and I'm leaning towards the Canon.

I like everything about this outfit! It makes me so ready for fall!

Semi-Homemade w/Lacey J!

I would like to start this post by saying...I cooked, and it was edible! Score! There are so many delicious looking recipes on Pinterest, so Friday night I decided to attempt to whip up something for Nate & I. I picked the Bacon Chicken Alfredo...I mean...who doesn't love Alfredo...then add bacon...yummo! I didn't follow the recipe to a T...but it turned out fab...you should definitely try it!


You will need:
1 1/2 cups of Cooked diced or shredded Chicken breast (I like to use Rotisserie) - I did use a Rotisserie, and it tasted great!
1 cup of diced fried ham
1 cup crisp bacon for the sauce
1 cup of crumbled cooked bacon (for the top)
1 diced Roma Tomato (for the top or can mix in) - I mixed it in
5 to 6 stalks of cooked Asparagus for the top (optional) - Gag...I substituted for sauteed mushrooms...lol
1 cup grated Parmesan Cheese and additional for the top
Pasta of your choice
SAUCE:...Well; you see, this is where I went Semi-Homemade. I am no domestic diva...so I opted for pre-made Alfredo...and it tasted wonderful because I heated it, then added the bacon, ham, mushroom, and Parmesan. But if you're feeling frisky the Alfredo directions follow...
1 cup milk
1 cup chicken Broth
1 cup Whipping Cream
1 cup grated Cheddar Cheese
1 cup grated Parmesan Cheese
2 Tablespoons butter
2 Tablespoons flour
1/4 tsp. garlic powder
1/4 tsp. onion powder
*Can add more seasoning to your taste
a few sprinkles of Red pepper flakes (opt)
1 Teaspoon white sugar
1/2 tsp. cracked black pepper
*Sometimes I also squeeze in 1 to 2 Tablespoons of fresh squeezed lemon juice.
DIRECTIONS
Fry bacon until crispy, place on Paper towels and set aside.  Fry pieces of Ham in a small amount of the bacon grease.  Sprinkle a tablespoon of Brown Sugar on top of the ham, and toss until the ham is golden and the Brown sugar has caramelized.  Chop or shred the Chicken Breasts, chop tomato, and chop tender cooked Asparagus. (If you don’t care for Asparagus, you could use Broccoli or any vegetable your family likes, or just leave it out entirely)
Over medium heat, melt 2 tablespoons butter.  Add 2 tablespoons flour, seasonings, sugar and whisk together with the butter until bubbly.  Continue whisking, and slowly add the milk, cream and the chicken broth.  Whisk Constantly, so that you don’t get any lumps.  You want your sauce to be nice and smooth.  Keep whisking until the sauce has thickened.  Turn heat to low, and add the grated cheddar and Parmesan cheese.  Once melted and mixed thorougly, turn your heat to the lowest temperature. Add part of the crisp bacon, fried ham and chicken pieces to your sauce. Mix well and simmer covered over very low heat.  Prepare your pasta until al dente. Drain well. 
At this point I mixed the sauce with the pasta, then topped with Parmesan to serve...Yummo...if I do say so myself! 
So we will mark this one as a Pinterest cooking Success!
